Walnut and Apple Cake

Ingredients

250g plain flour
2 teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
300g caster sugar
1 teaspoon vanilla essence
3 tablespoons water
200ml light oil
3 eggs, lightly beaten
3 apples, peeled, cored and quartered
125g chopped walnuts

Preparation method

1. Pre-heat oven to 190 degrees C.. Grease a 23cm cake tin.
 
2. Sift together the flour, cinnamon, bicarbonate of soda and salt. Add in sugar, vanilla, water, oil and eggs; mix until well-blended. Stir in apple quarters and chopped walnuts.
 
3. Pour into tin and bake for 50 minutes or until a knife inserted into the middle comes out clean.
 
4. Cool on a wire rack before serving.
