| 250g plain flour | 
         
          | 2 teaspoons ground cinnamon | 
         
          | 1 teaspoon bicarbonate of soda | 
         
          | 1/2 teaspoon salt | 
         
          | 300g caster sugar | 
         
          | 1 teaspoon vanilla essence | 
         
          | 3 tablespoons water | 
         
          | 200ml light oil | 
         
          | 3 eggs, lightly beaten | 
         
          | 3 apples, peeled, cored and quartered | 
         
          | 125g chopped walnuts         Preparation method       
           | 1. |  | Pre-heat oven to 190 degrees C.. Grease a 23cm cake tin. |             |  |             | 2. |  | Sift  together the flour, cinnamon, bicarbonate of soda and salt. Add in  sugar, vanilla, water, oil and eggs; mix until well-blended. Stir in  apple quarters and chopped walnuts. |             |  |             | 3. |  | Pour into tin and bake for 50 minutes or until a knife inserted into the middle comes out clean. |             |  |             | 4. |  | Cool on a wire rack before serving. |  |  |  |  |  |
